Description

These small (penny-sized), orange-pink, sun-dried shrimps are used as a flavoring in African cuisine. They have a salty, fishy flavor and a chewy texture, and are used whole, chopped, or ground in soups, stuffings, stir-fries, noodles, and salads. Often they are soaked in warm water to reconstitute before using; the soaking water is sometimes also added to the dish for extra flavor.
